While image and sound have been digitized in near comnpleteness, digitization of taste and smell are still wanting. Electric noses and chip-based olfaction are able to capture and identify molecular signatures yet organoleptic patterns exist beyond food composition characterization. Flavor measurements vary widely depending on purpose, mood, enviroment, and individual variation. New AI based methods for sensory analysis of foods are being developed. This panel explores how these digitization efforts can be combined into a single model. Will there be agreement on a unified flavour model in the future?
